I am so excited about today’s recipe! I’m sharing this Pineapple Orange Smoothie from my friend Allison Miller who blogs at Cupcake Diaries. Doesn’t this Pineapple Orange Smoothie just make you giddy about summer? One thing I love about Allison’s cookbook, is that she makes recipes that are easy, and family-friendly. No funky ingredients, just simple homemade (and semi-homemade) recipes that are sure to please your family. Now, because I know Allison personally, I know how hard she worked on this book to create the best recipes for this summer-inspired cookbook, and she did not disappoint! I am loving the bright colorful pictures and easy recipes. My oldest son wants to make “all the shrimp ones.” Haha.

When I think of summer, I’m instantly thinking of me, sitting in the shade with a cold drink in my hand, while I watch the kids play in the yard. So obviously, I had to try this Pineapple Orange Smoothie. I’m also a sucker for fresh pineapple, so this drink was a must! I will also say that I’m very excited to try the Raspberry Cheesecake Bars, Chicken Caesar Pasta Salad, Bacon ‘n Eggs Burger, and Asian Marinated Grilled Shrimp Tacos (all pictured below) from Allison’s cookbook too! I’m telling you, there is something for everyone in this cookbook.

My daughter keeps asking me to make more of this Pineapple Orange Smoothie! I think of it more like a slush, only because it has a little soda in it to make it frothy, but the fresh fruit, ice, orange juice, and coconut milk create a lightly sweet, super refreshing slushy drink. You are going to love sipping on this drink this summer!

Pineapple Orange Smoothie

Just add ice to this frothy, sweet, and creamy 4-ingredient summer slush, also known as Pineapple Orange Smoothie.
Yields4 servings

Ingredients

  • 4 cups (980 g) pineapple chunks, (I love fresh pineapple for this)
  • 1 ½ cups (375 g) ice
  • ¼ cup (59 ml) orange juice
  • cup (80 ml) Sprite
  • ¼ cup (59 ml) coconut milk, (full fat from the can works great)

Instructions
 

  • Place the pineapple and ice in a blender; blend until smooth.
  • Add the orange juice, Sprite, and coconut milk. Blend again until smooth. Serve immediately.
