This Sweet Chex Mix Recipe is easy to make with a sticky sweet butter syrup and a mixture of cereals, shredded coconut, and sliced almonds. It’s a deliciously gooey and chewy no-bake snack perfect for movie nights, parties, or holiday gifting.

Gooey Chex Mix

The first time we had this gooey Chex mix was from a Christmas neighbor gift.

One taste and we were all hooked! What was this delicious sticky chex mix? It reminded me a lot of my marshmallow popcorn recipe. Sweet and slightly salty. Soft, sticky, and gooey. But most importantly — unbelievably addicting!

Luckily, we got our hands on the recipe and are so excited to share it with you!

This sweet Chex mix recipe makes a lot, which is great for sharing or gifting. And there’s no better opportunity than holiday parties and gatherings to whip up a delicious Chex mix snack.

Sweet Chex Mix Recipe

To make this chewy Chex mix you will need these ingredients:

  • Rice Chex Cereal
  • Corn Chex Cereal
  • Golden Grahams Cereal
  • Sweetened Coconut Flakes – This is an optional add-in, but we love it.
  • Sliced Almonds – This is also optional, and can be swapped for any nut. Mixed salted nuts work well here. Pretzels would also be good, or you can keep it simple with just the cereals.
  • Granulated Sugar
  • Light Corn Syrup – Karo syrup is a popular brand.
  • Salted Butter – Or unsalted butter plus 1/4 to 1/2 tsp salt, to taste.
  • Vanilla Extract

The variety of flavors and textures are so fun to munch on in this sticky treat!

How to Make Classic Chewy Chex Mix

It is very easy to make this chewy Chex mix, first:

  • Place the cereals, coconut, and almonds in a VERY large bowl. Toss together and set aside.

TIP: If you don’t have a huge bowl, you can mix the ingredients on one or two half sheet pans lined with wax paper or a silicone baking mat.

Make the Syrup (Candy Coating)

  • Place the sugar, corn syrup, and butter in a large saucepan. Cook over medium-high heat until the mixture reaches a boil, stirring occasionally. Boil for 2 minutes more, stirring occasionally.
  • Remove mixture from heat and stir in the vanilla.

Coat the Chex Mix

  • Pour the sticky syrup over the cereal mixture, while still warm. Stir well to coat all of the Chex mix ingredients.

It’s awfully tempting to eat this sweet Chex mix recipe while it’s still warm. Just be careful while it’s still hot. It’s so sticky, gooey, and delicious!

Extra Tips

You may spread the mixture on a half sheet tray that is lined with wax paper, a silicone baking mat, or simply grease the pan with cooking spray. This helps cool the snack mix faster.

EXTRA TIP: You may also break up the cereal pieces periodically as it cools so it doesn’t stick completely together.

Serving and Storing

Serve in a large bowl with a scoop or tongs. Since the mixture is sticky, it is nice to divide up portions into separate bowls/small cups for easier serving.

This sweet Chex mix can be stored in an airtight container or zip-top bag at room temperature for up to 5-7 days.

NOTE: The sweet Chex mix will likely clump together as it is stored. If you desire individual portions, I would store a them in individual bags.

Ingredients

  • 4 cups (123 g) Rice Chex Cereal
  • 4 cups (123 g) Corn Chex Cereal
  • 4 cups (160 g) Golden Grahams Cereal
  • 2 cups (240 g) sweetened coconut flakes
  • 1 cup (84 g) sliced almonds
  • 1 cup (200 g) sugar
  • 1 cup (237 ml) light corn syrup , (Karo)
  • ¾ cup (170 g) salted butter, (12 Tbsp) *See NOTES
  • 1 tsp vanilla extract

Notes

  • Salted butter is preferred to balance out the sweetness. If using unsalted butter, add 1/4 to 1/2 tsp of salt (to taste) to the syrup mixture.
  • Coconut and Almonds are optional add-ins. Salted Mixed Nuts or Pretzels would also work well to add a salty component. Or you can keep it simple with just the cereals.
