This patriotic 4th of July Fruit Pizza resembles the American Flag with a brownie on bottom and whipped cream cheese frosting on top, using blueberries, raspberries, and extra frosting for the stars and stripes. It’s a festive and delicious red white and blue dessert.
18.2oz(515g)box brownie mix, I used Duncan Hines 13x9 Family Size Dark Chocolate Fudge Brownie Mix
1large egg, or the amount listed on the box
⅓cup(78ml)water, or the amount listed on the box
½cup(118ml)oil, (canola or vegetable) or the amount listed on the box
Whipped Cream Cheese Frosting
8oz(226g)cream cheese, cold
1 ½cups(180g)powdered sugar
⅛tspsalt
1tspvanilla extract
1 ½cups(355g)heavy whipping cream, cold
Fruit for Topping
⅓cup(50g)blueberries, the smaller 1 pint (11oz) container will be plenty
2cups(280g)raspberries, buy the 12oz container
Instructions
Brownie (Crust)
Preheat oven to 350 degrees Fahrenheit. Grease a 9×13-inch or quarter sheet pan with cooking spray. Set aside.
In a large bowl stir together the brownie mix, egg(s), water, and oil as directed on box. Spread into prepared pan.
Bake at 350˚F for 20 minutes (check doneness with a toothpick). Remove from oven and allow to cool completely.
Whipped Cream Cheese Frosting
In a stand mixer fitted with the paddle attachment, beat the cream cheese for 10-15 seconds. Scrape bowl. Then add the powdered sugar, salt, and vanilla and mix until combined. Scrape bowl.
Switch to the whisk attachment and whip frosting on medium-high speed while slowly adding the heavy cream until light, fluffy, and thick. Scraping the bowl as needed.
Dollop then spread two-thirds of the frosting over the cooled brownies. Save the remaining frosting for piping.
Topping
Rinse, then dry the fruit on paper towels. Use blueberries to create a rectangle in the top left corner.
Create the red stripes with rows of raspberries leaving space in-between the rows for the white stripes.
Create the white stripes by piping frosting between the rows of raspberries. I used a Wilton 2D tip and piped a drop flower, but you could also do shells. You could even just cut off the corner of a zip-top bag and pipe it straight across. (This makes the white layer 3D like the stars and red stripes.)
Use a sharp knife to cut the brownie fruit pizza into 15 pieces (3 rows by 5 rows). Rinse and dry the knife between cuts for clean slices. Then use a serving spatula to lift the bars out of the pan. Serve immediately. (I recommend waiting to cut the dessert until just before serving to preserve the visual appeal.)
Notes
Storage: This 4th of July Fruit Pizza needs to be refrigerated due to the whipped cream cheese frosting. Cover the pan lightly with plastic wrap. Refrigerate for up to 5 days. The type of fruit you use will determine how long this will last. Especially if it’s cut fruit and not whole fruit like the blueberries and raspberries.
Make it in a 12-inch round pizza pan. If you don't have a pizza pan or only have the kind with holes, there are cheap foil pizza pans at the dollar store that work great for this brownie fruit pizza. Bake time should be about the same. Of course you will have to decorate it slightly different.
Sugar cookie crust instead of brownies. My sugar cookie fruit pizza recipe will work in place of the brownies if you’d rather have a cookie crust.
Use bananas for the white stripes. If you desire all fruit on top, sliced bananas will work for the white stripes. You will want to lightly toss the slices of banana in lemon juice to prevent browning and serve immediately for best results.
Use strawberries for the red stripes. Replace the raspberries with slices of strawberries. You can overlap them slightly or lay them flat.
