This Virgin Miami Vice Drink Recipe is a non-alcoholic frozen smoothie combination of a Pina Colada and Strawberry Daiquiri swirled or layered together in one drink.
¼cup(59ml)cream of coconut, (Coco Real, Coco Lopez or whatever brand you can get; in the alcoholic mixers aisle.)
½cup(70g)frozen pineapple
1cup(140g)ice
Virgin Strawberry Daiquiri
½cup (118ml)tonic water, or lemon-lime soda
2Tablespoonssimple syrup
1 ½Tablespoonslime juice
1cup(140g)frozen strawberries
½cup(70g)ice
¼ to ⅓cup (59ml)water, as needed for desired consistency
Instructions
Add the pineapple juice, cream of coconut, frozen pineapple chunks, and ice to a blender. Process on high until smooth. About 40-60 seconds. Divide the pina colada smoothie into 2 or 3 tall glasses. Rinse blender out.
Add the tonic water/lemon-lime soda, simple syrup, lime juice, frozen strawberries, and ice to the blender. Process on high until smooth, adding water a little at a time until the desired consistency is reached. Pour the strawberry daiquiri smoothie mixture over the pina colada mixture in each glass.
Garnish with strawberries, limes, or pineapple, if desired. Serve immediately with a straw to drink with.
Notes
How to Layer: You can tilt the glass to layer the smoothie diagonally or to create a swirled appearance.
Ice: Swap the ice for additional frozen strawberries in the strawberry daiquiri portion of the drink to boost the fruit flavor and to a create a redder hue. NOTE: The ice is still needed to help dilute the pina colada smoothie because of the sweet fruit juice and frozen fruit.
