Instructions
Add the pineapple juice, cream of coconut, frozen pineapple chunks, and ice to a blender.
Process on high until smooth. About 40-60 seconds. Serve immediately. Garnish with pineapple wedges and/or maraschino cherries, as desired.
Notes
This recipe yields 28oz (3.5 cups) total, for two 14-oz servings.
Cream of Coconut can be found in the alcoholic mixers aisle of the store. Coco Lopez and Coco Real brands are most popular.
Swap out the frozen pineapple for other frozen fruits (blackberries, strawberries, raspberries, mango) to make a whole new flavor.
